Get your Moju on and let’s get down!

Wambatu Moju. Can you dig it? It may sound like a Swahili song title, but is in fact a sweet and spicy vegetarian dish! The main ingredient of this dish is the international vegetable of mystery with many names - Eggplant, Aubergine, Brinjal and, of course, Wambatu. Deep fried wambatus slices are combined with pearl onions, a good helping of green chillies, coconut milk, vinegar, sugar, a variety of spices and cooked down. The moju is then left for a few hours for the flavours to develop and mature. This jammy-spicy-tangy dish is the perfect partner in crime for Sri Lankan Yellow Rice, Fried Rice and, the endemic favourite, Lamprais.
