A traditional sweet delicacy born from deep fried rice flour and treacle, the Konda Kevum is the undisputed head of festive meal tables. It gets its name due to its striking resemblance to the shape of hair pinned up in a bun on a person’s head; Konda being the Sinhalese word for hair. As it stays fresh for a couple of days without any preservatives, historical tales even state that soldiers carried Konda Kevum in their rations to provide a quick and accessible snack as they marched into battle. Forming the “Konda” during the frying process however, is a tricky affair as it requires some practice and skill, making a perfectly formed Konda Kevum a sought after delicacy.
